I love a GREAT French Onion Soup and a couple years found an amazing RECIPE for one!DSC_0253-770x513

You can only imagine how much I drooled when I saw this recipe for the ultimate French onion soup grilled cheese on Spoon University’s website! Here is it:

Prep time: 5 minutes
Cook time: 45 minutes
Total time: About 50 minutes

Servings: 2 sandwiches

Ingredients:
1 large yellow onion
2 tablespoons butter
2 tablespoons red wine or beef broth
4 pieces good sandwich bread
2 tablespoons mayo
½ lb gruyere cheese, sliced thinly

Directions:

1. Place a skillet over medium-low heat, add 1 tablespoon butter and then add in the onions once the butter is totally melted.
2. Stir the onions every 5-10 minutes. They’ll become a deep golden brown and all of their natural sugars will release. This will take patience! Perfect caramelization should take around 30-35 minutes.

3. When your onions are a deep brown and fully caramelized, add the red wine or broth to deglaze the pan, being sure to scrape off all the brown bits from the bottom that might be stuck. Season with salt and let cool to warm.
4. Slather one side of each piece of bread with mayo (these will be your outside pieces).
5. Place a huge heaping spoonful of your onions and hefty slices of gruyere onto one piece of bread (the un-mayoed side). Top with the other piece of bread.

6. Melt remaining tablespoon of butter in a skillet over medium heat. Make sure the pan is very hot, and then place your sandwich on one side and put something heavy, like a pot, on top to weigh it down.

7. Flip the sandwich, brown the other side, and wait until cheese is melted.

8. EAT IT!!

How cute and fantastic is this?!

clem-and-millie-mintzToday is a very special day for this lovely couple as they are celebrating their 80th wedding anniversary in their hometown of Parry Sound. Millie is 95 years old and Clem is 100 — they met in Toronto and marries when Millie was only 15!

They have now been recognized as having the longest marriage in Canada. Such a milestone that “people have to look two or three times at the [certificate] and read it again,” their grandson said.

Millie now has Alzheimer’s disease, but Clem still spends all day with her talking to her and playing music at Belvedere Heights home. Now that is true love!

More than 840 dresses have been make by Lillian in the last 2 years & her goal is to make 150 more before next May! Why? Cause making her 1000 dresses on her 100th birthday seems like a great accomplishment, no?! And she is turning 100 at the beginning of May!

It only takes Lillian 1/2 a day now to make these cute dresses, with a break midday. “I could probably make 2 a day, but I enjoy just doing the one. It’s just one of those things I guess. I learnt how to do it and then I thought why not put it to good use?!”

Lillian donates the dresses to Little Dresses for Africa, who then distributes them to orphanages, churches and schools in 47 countries in Africa, as well as to children in need in countries like Haiti, Honduras, Thailand, Mexico and even parts of the United States.

Kudos Lillian!!

OMG! I’d love for this to happen to me! I’d totally freak out at first, but this baby seal is so friendly! How adorable!

Wanting to play, this seal pup decided to join in the fun by hopping right onto the boards of two surfers off the coast of northern England!

The seal played with them for about an hour, looking like it was truly trying to learn the tough skill of balancing on a surf board! It looks like I’m not the only one who has trouble with that! Haha

“It kept sliding off,” one of the surfers, Matthew Stanley, told the BBC. “But every time you caught a wave it would surf in on the white water.” You can see the seal really surfing 1:40 in!

Amazing, no?!

I am not a parent but I do know that it is all about being the best mom or dad you can be to your kids. Sometimes it’s simple… sometimes it’s a series of curve balls that challenge you in a crazy way! This video made me realise that no matter what, it all doesn’t really matter — because there’s no simple, straightforward manual for raising kids!!

No wonder this video got over 4 million views!! What a PERFECT example of parents who know how to LOVE UNCONDITIONALLY.

These parents are doing it right. Don’t you think?

Why sip your cocktail, when you can lick it! On a hot summer day — or on a hot summer date 😉 — why not enjoy this yummy dessert:  BAILEYS POPTAILS!!

Baileys-Popsicles-Marla-Meridith-BO1V1831I will say though, that after looking at the ingredients, I would add more Baileys to the mix 😉

You will need:

    • 1/2 cup Heavy Cream
    • 1 1/2 cups 2% Milk
    • 3 tablespoons Instant Coffee
    • 2 tablespoons Whole Cane Sugar
    • 1/2 teaspoon pure Vanilla Extract
    • pinch of Sea Salt
    • 2 ounces Baileys Irish Cream
You will also need Popsicle Molds & Sticks

Method

  • Bring all ingredients (excluding Baileys) to a simmer in a saucepan. Stir, and remove from heat when well combined. Transfer to a container & place in the fridge for about 1 hour or until cool. Remove from fridge & mix in the Baileys Irish Cream. Pour poptail mixture into pop molds. Add the stick. Freeze overnight.
